Description of Sodium phytate
Sodium phytate is an organic sodium salt, appearing as a white hygroscopic powder. It is readily soluble in water, and its aqueous solution is strongly alkaline. As sodium phytate contains a high proportion of sodium ions, it can serve as a promoting agent for reactive dyes; additionally, due to its alkalinity, it can function as a fixing agent for reactive dyes.
Phytic acid/sodium phytate is widely present in cereals, legumes, and oil crops, and has extensive applications. In the food industry, it is used as an antioxidant, antibacterial agent, color fixative, chelating agent, and preservative. Under certain conditions, sodium phytate is prone to hydrolysis, which can produce sodium salts of inositol pentaphosphate, inositol tetraphosphate, inositol triphosphate, inositol diphosphate, inositol monophosphate, and inositol itself. Among these, inositol triphosphate plays a role in intracellular signal transduction in plants and animals, while inositol possesses anti-cancer and anti-aging properties.
Due to its strong chelating ability, sodium phytate readily binds with metal ions such as calcium and magnesium to form highly stable chelate complexes. This gives it significant application value in industries such as food, pharmaceuticals, and daily chemicals.
Application of Sodium phytate
Sodium phytate, also known as sodium inositol hexaphosphate (English name: sodium phytate), is a white powder at room temperature and is easily soluble in water. Its parent compound, phytic acid (inositol hexaphosphate), is an organic phosphorus compound widely found in plant seeds, grains, germs, and rice bran. Phytic acid and its sodium salts possess a strong metal-chelating capacity and are considered rare multidentate chelating agents for metals. This is because their main functional group is based on a six-membered ring structure containing 24 oxygen atoms, 12 hydroxyl groups, and 6 phosphate groups. When encountering metals, they readily form multiple chelate rings, resulting in highly stable complexes. Consequently, phytic acid and its sodium salts have extensive applications and high value in the food, pharmaceutical, and daily chemical industries.
