Description
ε-polylysine is a L-lysine polymer which is produced by fermentation with Streptomyces albulus and purified through ion exchange chromatography process. It is a natural food preservative with a broad antimicrobial spectrum. It can inhibit the growth of Gram(+) and Gram(-) bacteria, yeast, mold, and even virus
Functions
Very good thermal stability
Effective over a wide range of Ph (3-9) and suitable for most foods.
Highly water soluble, colorless and tasteless, easy to use without affecting color and flavor of the food products.
Safe as the product can be decomposed into an essential amino acid L-lysine in the human intestine without any adverse health effect
Advantages
Highly effective, broad-spectrum bacteriostatic agent, ε- polylysine hydrochloride has excellent inhibitory effects on Gram-positive and Gram-negative bacteria, molds, yeasts, and viruses. It works well in the range of pH3-9 and is suitable for most of the foodstuffs.
Good water solubility, clear solution, no odor, easy to use and does not affect the original color and flavor of food.
High safety, can be degraded to essential L-lysine in the body after consumption, without any toxic side effects.
